Review of the sweetest beet varieties. What determines the sugar content and can it be improved?

Beet for centuries is a ubiquitous valuable nutritious product. It is widely represented in many favorite and popular dishes of Russian cuisine. Gardeners willingly grow beets, while trying to choose the most juicy and sweet varieties.

This vegetable is rich in vitamins and promotes healing of the body. This article describes in detail what determines the sweetness of the root, whether it can be increased, which varieties are the best, red and sugary.

What does it depend on?

The sweetness of beets can be very different, as well as its juiciness and softness. The sweetness of beets is characterized by the percentage of sugar in it.

With the wrong farming practices, you can get hard and savory root vegetables.

Of fundamental importance is:

  • selection of quality seeds;
  • proper care - sufficient uniform irrigation, maintaining constant moisture and soil looseness, air access to the roots, thinning of seedlings, proper feeding and alkalization of the soil, maintaining a pH 6.5-7.5, weeding, mulching;
  • the size of the harvested root crops should not exceed 5-6 cm.

Is there only sweetness in this beet?

Of all the types of beet sugar is the sweetest. The sugar content in its modern varieties is more than 20%. She was taken out of the fodder beet just for industrial sugar production in the 18th century in Germany. And this was done due to the fact that there is a lot of sugar in the vegetable in general: in the dining room - 8.3%, in the feed - 6%.

Which types are the darkest and contain the most carbohydrates?

The color of the skin of red beet can range from red to intensely violet.and the pulp is from white to dark red and dark purple. It is believed that the darker the flesh, the tastier the fruit and the more sugar, vitamins, anthocyanins and minerals in it.

But there are currently many sweet varieties with a pulp from white to yellow. As for sugar beet as such, its pulp has white color.

The most popular among gardeners are varieties of the harvest-sugary group.
